The Role of Sodium CMC in The Beverage Industry

Sodium Carboxymethyl Cellulose is refined and synthesized from natural plant cellulose. Sodium carboxymethyl cellulose with high purity can also be called edible cellulose gum, which can replace gelatin, agar, sodium alginate and pectin in food production.

Food grade CMC has been widely used in a variety of liquid beverages, like fruit juice, vegetable juice, etc. Food grade CMC can make the pulp or various solids or other substances suspend evenly and plumply in the container, improving taste and also extending the shelf life of the beverage.

In addition, food-grade CMC can also play a role in emulsification and stabilization in protein beverages. Normally, protein beverages such as soy milk, cocoa milk, peanut milk, etc., contain different degrees of fat and protein, so they will separate and float during storage, affecting the product’s appearance. Besides, due to the property of protein, protein coagulation will occur. Food grade CMC can solve these problems. We add appropriate amount,as it would dissolve in water to form a stabilizer of transparent colloid, which can keep protein in a stable state, not easy to coagulate, and can fully emulsify fat without separation floating.

In addition to product such as juice and protein beverages, food grade CMC is also widely used in products such as yogurt and ice cream. Its excellent characteristics enable CMC to make these products more stable, have a better taste, and improve product acceptance.
