Sodium CMC used in various types of foods summary

Sodium CMC is one of the most important food additive, due to its characteristic of thickening, suspension, emulsification, stability, shape, film forming, expansion, anti-corrosion and preservation and acid resistance and other functions.

It has been widely used in a variety of foods, like ice cream, ketchup, mayonnaise, bakery food, fruit juice, vegetable juice, yogurt and instant noodles, etc. Now, we would like to make a summary for various types of our food grade CMC used in various types of foods.

  1. Sodium CMC used in Ketchup, soy sauce, Mayonnaise etc. Our FINSIN-5 CMC can meet customer’s request well. It can make these foods thick, stable and prolong the shelf life. Adding salt-resistant CMC to adjust its viscosity can make these condiments taste delicate and lubricated.

Our suggested dosage is around 0.2-0.5%.

  • Cotton candy&Instant noodles: It is easy to control water content, reduce oil absorption, and increase the gloss of noodles by adding 0.1% CMC. 

SINOCMC recommended FINSIN-2 CMC

Our suggested dosage is around 0.1-0.3%.

  • Ice cream: The viscosity of CMC is relatively lower at higher temperatures, and the viscosity increases when cooling, which is conducive to the improvement of product expansion rate and easy to operate.

SINOCMC recommended FINSIN-5 CMC

Our suggested dosage is around 0.2-0.4%.

  • Fruit juice drinks, soups, sauces, instant solid drinks: CMC has good rheology property and refreshing taste, and its good suspension stability makes the product flavour and texture uniform. Acidic juice requires CMC with even degree of substitution, and the effect will be better if a certain proportion of other water-soluble gum (such as xanthan gum) is mixed. 

SINOCMC recommended FINSIN-5 CMC

Our suggested dosage is around 0.2-0.5%.

  • Dehydrated vegetables and other dehydrated foods, like beancurd skin and dried beancurd sticks: CMC has good rehydration and good appearance, which make it an ideal material for dehydrated products.

SINOCMC recommended our FINSIN-2 type CMC

Our suggested dosage is around 0.1-0.3%.

  • Orange juice, yogurt, granular orange, coconut milk and fruit tea: CMC has good suspension property. If combined with xanthan gum or agar, a better effect can be achieved for above products. Medium viscosity CMC (DS 0.7 or above 0.9) should be selected. 

SINOCMC recommended specification of CMC: FINSIN-A5(FVH9-3)for yogurt and acid fruit beverage. FINSIN-5(FH2000) used for the other foods.
Our CMC recommended dosage: 0.05%-0.15%

  • Sodium CMC used in cans and frozen foods can significantly improve the tenderness, color, and flavor of the foods. Besides, it can improve the water retention of meat products and increase the yield rate and prolong the shelf life.

Our CMC recommended dosage: 0.1%-0.25%
